Milton S. Hershey founded the Lancaster Caramel Company in Lancaster, Pennsylvania in the 1880s. He attended the World’s Columbian Exposition of 1893 in Chicago, and saw a German-made chocolate-processing machinery. Hershey then decided to go into the chocolate business. In 1900 he sold the Lancaster Caramel Company and began the manufacture milk chocolate bars. In 1903, Milton Hershey began work on a new factory in Derry Township, Pennsylvania. It then became the world’s largest chocolate-manufacturing plant.

Semisweet Chocolate: is required in the US to contain at least 35% chocolate liquor. Most semisweet chocolate contains 35 to 45 percent chocolate liquor. Semisweet chocolate is often referred to as dark chocolate. There is no specific amount of sugar required for chocolate known as semi-sweet. However, semisweet usually refers to chocolate with no more than 50% sugar
